Roasted Green Beans with Shallots
1 lb. green beans
3 shallots, sliced
1/3 olive oil
2 tablespoons red wine or sherry vinegar
1 tablespoon honey
1 1/2 teaspoons paprika
1 teaspoon Dijon mustard
1 clove of garlic
2 tablespoons fresh mint or parsley
Salt & pepper
1/4 cup chopped almonds (optional)

Preheat oven to 450F, line baking sheet with foil

Place beans and shallots on baking sheet; drizzle with 2 tablespoons olive oil and season with salt and pepper, combine

Transfer to oven and roast, until beans are cooked 20-25 minutes

Use a blender to combine 1/4 cup olive oil, vinegar, honey, paprika, mustard and garlic, drizzle dressing over vegetables and toss

Season with salt and pepper, top with mint (or optional almonds)

Serve warm and enjoy!
