Roasted Green Beans with Shallots

 

 1 lb. green beans

3 shallots, sliced 

1/3 olive oil

2 tablespoons red wine or sherry vinegar

1 tablespoon honey

1 1/2 teaspoons paprika

1 teaspoon Dijon mustard

1 clove of garlic

2 tablespoons fresh mint or parsley 

Salt & pepper

1/4 cup chopped almonds (optional)

  1. Preheat oven to 450F, line baking sheet with foil

  2. Place beans and shallots on baking sheet; drizzle with 2 tablespoons olive oil and season with salt and pepper, combine

  3. Transfer to oven and roast, until beans are cooked 20-25 minutes

  4. Use a blender to combine 1/4 cup olive oil, vinegar, honey, paprika, mustard and garlic, drizzle dressing over vegetables and toss

  5. Season with salt and pepper, top with mint (or optional almonds) 

  6. Serve warm and enjoy!
